Tipology: White Sparkling Wine, Classic Method, Brut.
Production Area: Lison-Pramaggiore (Venice province), Veneto, Italy.
Soil: Flat well drained ground, with dolomitic limestone and clay texture.
Vinification: Soft pressing of the grapes. The first fermentation starts in autoclaves at controlled temperature (not over 15°-16°C) with selected yeasts for 8-10 days. A second long re-fermantation starts in bottle at a low controlled temperature (12-14°C) and keep for at least 24 months (according to the Classic Method).
Aspect: Bright straw yellow, brilliant, nice and soft foam with optimal persistance; very fine and persistent perlage.
Bouquet: Elegant and clean, with fruity hints, bread croast and yeasts aromas.
Taste: Good bodied, with a dressed acidity, dry. The fine and delicate perlage caress the palate and the tongue, releasing all the aromas and giving vigor to the taste.
Alcohol: 12,5% Vol
Residual Sugar: 9 g/L
Total Acidity: 3,5 g/L
Pairings: Excellent sparkling wine to pair with fish dishes, in particular with raw fish, shrimps and oysters. Optimal also with beef tartare and important meet dishes.
History: Matapan, known also as Grosso Matapan or Silver Ducato, was the coin made around the 1200A.D. by the 41st Venetian Duke, Enrico Dandolo, to cope the increasing international commerce of the Serenissima Republic.
