Tipology: White Sparkling Wine, Martinotti-Charmat Method, Brut.
Production Area: Vineyards situated on hills at 220-300m a.s.l., at west of Conegliano, in Farra and Pieve di Soligo and Crevada.
Soil: Prevalently clayey and calcareous soils.
Vinification: Soft pressing of the grapes. The fermentation starts in autoclaves at controlled temperature (not over 17°-18°C) with selected yeasts. A long re-fermantation starts at a low controlled temperature and keep for at least 45 days (according to the Martinotti-Charmat Method).
Aspect: Bright straw yellow with greenish tinges, brilliant, nice and abundant foam with optimal persistance; very fine and persistent perlage.
Bouquet: Elegant and fruity, with hints of apple, pear, delicate flower and mineral aromas.
Taste: Gentle and elegant, good bodied, with a dressed acidity, dry and intense. Fruity and persistent. The fine and delicate perlage caress the palate and the tongue, releasing all the aromas and giving vigor to the taste.

Residual Sugar: 10 g/L
Total Acidity: 5,5 g/L
Pairings: Excellent sparkling wine to pair with fish dishes, in particular with raw fish, shrimps and oysters.
History: «Doxe» in the Venetian dialect means «Doge». Today the Prosecco is the reigning sparkling wine of this region, as well as the 120 Venetian Doges were in the past. We decided therefore to symbolically invest our Conegliano Valdobbiadene Prosecco Superiore DOCG, in the charge of the 122st Doge, with the purpose of bringing back to light the history of the Venetian Dukedom that governed these lands for more than 1000 years, from the 6th century to 1797.
